Well now that the fall is upon us it is time to start putting some calories back into our diets. What better way than with the art of baking.We have recently met a very creative pastry chef who is branching out on her own. Katie Mcguire is the owner of Sweet Tooth Desserts. A Vancouver based culinary company specialising in what else, desserts. Katie has offered to supply us with the occasional recipe that best suits the season. We have posted the recipe below. It’s the best dessert ever, it will leave guests speechless!!

Ingredients:

1c. boiling water

10 oz.’s of pitted dates

1 tsp. baking soda

1 1/2 c. flour

1 tsp. baking powder

pinch of salt

1 stick or 8 Tbsp.butter

5 Tbsp. sugar

2 eggs

1 tsp. vanilla

Toffee Sauce:

1/2 pint of heavy cream (whipping)

1 c. brown sugar

1/2 stick or 4 Tbsp. butter

Whipping cream or vanilla ice cream for topping

Directions:(preheat oven to 350 bake for 30-35 min’s) 1.Butter 9″ pie pan, and also line with parchment paper.
2.In a small bowl add boling water, baking soda and dates, let sit till softened.
3.In another bowl combine flour, baking powder & salt, set aside.
4.Cream butter and sugar till fluffy then add eggs one at a time.
5.Slowly add flour mixture until just combined, and add date mix (water and all) & vanilla.
6.Now it’s ready to put into the buttered pan. Bake for 30-35 min’s till firm (you can check it with a tooth pick).

7.Meanwhile, you can make the toffee sauce.
8.Bring the cream and sugar to a boil, stirring occasionally, add the butter and boil for 3 min’s. Take off the heat, and set aside.
9.Let the pudding cool for 5 mintues, then with a fork poke holes in the top of the pudding. Now, you can transfer the pudding to a serving plate, and spoon half of the toffee sauce on top. Leave the remainder for service.
10.This sexy dessert is best served warm, you can reheat the toffee sauce just before service, which will melt in your mouth. It can be also served with either a nice scoop of ice cream or whipping cream.
This recipe will serve 8, so I hope you and your guests enjoy this sexy sticky toffee pudding!
